This dish is better known as Kitchari or Kichadi in India. It is a traditional Ayurvedic one-pot dish that combines rice and mung beans or lentils with many herbs. It is a very easy to digest meal, a very nutritious one and an ideal source of protein that strengthens the body.

In Ayurvedic and yoga retreats people sometimes eat Kitchari daily to detox the body, which is a lot more pleasant to undergo than a juice treatment for example. It is said that eating just this dish for 3 to 5 days will purify the digestive system and cleanse the body of toxins.

It’s a go-to dish in fall and winter, when heart-warming meals are needed.
